Ingredients
500 g carrots
150 g 00 flour
4 yolks
40 g Parmigiano Reggiano
nutmeg
cinnamon
1/2 dl milk cream
100 g formadi frant
1 carrot, to garnish
cream butter
poppy seeds
sea salt

Boil the carrots, sieve them and let them drain overnight.
Heat in a double boiler the formadi frant with the milk cream, whisk it and keep it warm.
Mix the carrot mash with flour, yolks, Parmigiano, cinnamon and nutmeg. Season with salt.
Use two spoons to shape gnocchi and place them in salted boiling water, then strain them with a skimmer. In a frying pan, stir-fry the trimmed carrot with a little butter, then add the carrot gnocchi and toss.
Place the gnocchi on a warm dish, sprinkle with the formadi frant sauce and the poppy seeds.
